No Additives, No Preservative Home-Made Bread

This is a great basic recipe for Focaccia, bread rolls, cheese sticks or what ever shape and bread flavour takes your fancy.  I do use a bread maker because I find it an amazing time saver but it will work if doing by hand too. By making your own bread there are no additives or preservatives and it is alot cheaper that buying organic stone ground bread.

Basic Stone Ground Bread Dough

250ml Warm Water
2 Tablespoon's Olive Oil
1 Teaspoon Salt
2 Teaspoons Sugar
3 Cups of Organic Stone Ground White Flour
2 Teaspoons granular yeast

Place the ingredients in order starting from the top into your bread maker pan and place on dough setting.  This generally takes 1 1/2 hours but bread makers vary.

                                        Preheat oven to 220 degrees Celsius

Once finished, remove from pan and shape into desired shapes, I cut mine into 8 then grated cheese and swirled it into the dough whilst twisting the dough and the buns simply shape into balls and cut a cross on the top so they can expand. Place on a lined tin or can use oil or flour on the tin so will not stick.

Let prove (rise) for 1/2 hour in a warm place, I place my tin in a plastic bag to prove for best results.

Place in preheated oven of 220 degrees Celsius and bake sticks or buns for around 25 minutes or until done this might be quicker or longer depending on oven and bun size.

Time flies so fast in December and it is already Happy Holidays for us at Nutrition by Nature Kombucha as our last day was today :).  After a crazy busy time of brewing a massive about of kombucha for all the shops and building stocks for the holiday Mangawhai Village Market each Saturday 9 - 1pm and for the big Mangawhai Gala Day on January 2nd 2016 I really need a break. 

Holidays always bring a time of reflection and grounding to what are the important things in life.  This reflection is individual to every one and there is nor right nor wrong and you are the story teller of your particular story of life. 

Enjoy your time over the next month, eat healthy whole foods, take up a new activity and don't be shy about doing so (I started surfing in my 30's and now in my 40's still learning but enjoy just being in the water). Start something new maybe eating at the table each night, turning off the cell phone at 7 pm, smiling at people as you walk past, start a journal, get back to nature with a bush walk or walk in the park but most important breath life into your life with something new.

Beautiful Gift Cards and Kombucha Punch Recipe...

December is here already and I must say I think for me this has been the quickest year of my life! It feels that August was just yesterday and Christmas was ages away. Nutrition by Nature 'Summer Fruits' Christmas Punch

1 liter of Pineapple Juice
2 limes sliced thinly
1 x Juicy pineapple, cubed and frozen over night
1 lime juiced 
1.5 liters of Sparkling/Soda Water
1 x 750ml Bottle of Nutrition by Nature Kombucha Summer Fruits sieved
Freshly grated Nutmeg to taste

Simply chill all ingredients over night place into a chilled punch bowl stir and add ice cubes, serve. Half the recipe for a small batch or double for a larger batch.

IE Produce, Kombucha Evening a Success...

What a wonderful informative evening at IE Produce in Takapuna yesterday evening and so great to meet so many nice people making their journey to better health and well being.

 This was the last of the years kombucha seminars where guest speaks spoke about how to make kombucha and  Organic Mechanic's and myself Nutrition by Nature talked about our journey to the kombucha culture and the importance of healthy living.

IE Produce is an amazing store, packed with all your organic, fair trade products and produce.  Joyce the owner is always an inspiration to talk to with her vast knowledge of healthly living and organic lifestyle. IE Produce is Bio Gro Certified this means that the products that are state Organic in the store are actually Organic so you have that confidence on what you are buying.

IE produce isn't totally organic as we all know in this modern world unfortunately this is impossible but the produce is always clearing marked organic or non-organic which I love and it is always amazes me how fresh it is.  I would say the freshest produce in Auckland which is extremely important for nutrient density as vitamins are lost the moment the fruit or vegetables are picked so fresh is best.

I love how everything is categorised for example a tea section, kombucha section, pasta's, energy bars the list goes on.  This is great that you can see all your selection. This store isn't just an organic store, ask your natural health questions to the delightful staff and they will do the utmost to help you.  It is very hard to find service like this.

I have been really busy in the last four months creating NUTRITION BY NATURE mainly specializing in the great probiotic drink KOMBUCHA Berry Boost, Summer Fruits and now Wild Elderflower.  At our local market I sell Kombucha, Gluten Free Cakes and Slices, Organic Produce and more.

It already Friday and the Mangawhai Saturday Market is tomorrow come down from 9am to NUTRITION BY NATURE gluten free baking. Butterscotch Slice with a drizzle 70% Dark Chocolate or deliciously moist Orange Cake filled with Sweet Cream Cheese.

Micro Birthing, are we setting our future children up for dis-ease....

Whilst at the Saturday Mangawhai Market selling my NUTRITION BY NATURE KOMBUCHA I met a lovely young lady who was pregnant she introduced me to the concept of Micro Birthing.

Scientist are now realising that meddling with natures most nature process of birthing is having a severe effect on our children's immune system from birth.  Add into the fact of formula feeding instead of breast feeding being not unusual in today's society from early on in a child's life.

The documentary Micro Birth was the winner of the Life Science Film Festival in Prague 2014 looks into this very issue, are we are heading for the biggest human disaster on record. 

A discussion with Hannah Dahlen, Professor of Midwifery at the University of Western Sydney looks at Natural Birth vs Cesarean Birth.

As a mother myself I know that Natural Birth is called 'Labour' for a reason and that it is hard work to deliver a baby (check out the clip below to get create techniques of an easy birth) and I also know that Cesarean Birth is essential in some cases when mother and child are in danger of dying.

When I was pregnant with my little girl I was asked if I was scared of giving birth and that if I wished I could opt for Cesarean.  If I had said yes would have they told me all the risks and factors that would be detrimental to my child's well-being?  Is this question placing fear into a new mothers mind?

Lucky for me I was told by my mother that our family 'pop them out like peas' and it was just in my head that I would do the same.  Did this then help me in birth to be more relaxed? and have a very easy and quick birth.

At the time the talk about town in 2010 was that North Shore Hospital in Auckland promoted Cesarean because the doctors get $3000 a baby where as Waitakarer Hospital promotes natural birth. At Waitakere the doctors where not payed per baby they where payed if there was no C-section or 3 C-section on their shift.

If this is true is the C-Section money driven? is this seen in other areas of New Zealand and the world?

Hannah Dahlen, Professor of Midwifery at the University of Western Sydney states that Iceland is the safest place to have a baby in the world and it has half the C-section rate of the western world this being 16% of births are C-Section.  It would be interesting to analyse if the Icelandic people dis-ease statistics is lower?

She goes on to say that the mother is more likely to die in a C-Section birth than a natural birth.

So why has C-Sections increased

  • Money - it is a lucrative business
  • The Modern Medical profession can intervene
  • C-Section is given more freely as an option even if mother and child is not in danger.
  • The risk of C-Section are not discussed and fully understood by families
  • Fear of giving birth especially with the increase in media like You Tube, TV etc

So if a C-Section is essential what can be done to give our future the best start in life.

The young lady at my stall in the weekend said now they are starting to give C-Section new borns bacteria and microbes from the mothers birthing canal and Virgina region and placing if into the new borns mouth as this is what would happen in natural child birth as it enters through this region.  This giving the baby a massive advantage to their immune system.

 Ina May Gaskin, MA, CPM, PhD (Hon) explains in this You Tube Clip techniques to increase oxytocin levels that relaxes the mother so allows for easier birth.  She looks at traditional techniques for child birth.  I still do not understand why why why!!! western world insists on lying on a bed to give birth this is the worst position

A.  The baby has to get over a mountain which is the back bone to get out of the birthing canal. Lying on your back  really seals the baby into the uterus and make for a painful birth.
B. Gravity does not go side ways it goes down, so why are we not on our feet stooping or on our knees and allowing gravity to do the work with our back bone out the way not curved.

This form of childbirth is barbaric and woman need to stand up and demand change.

Onions to draw out dis-ease in the body.......

I have just discovered this ancient way of drawing away illness/dis-ease within the body.  Most people know how great onions are for us with their anti-biotic/anti-bacterial properties. Eating onion and garlic for lunch and dinner in raw and cooked form of course is the most common but another awesome way to benefit from this wonderful vegetable is to get....
One onion
One mug
One fork
Place a peeled and halved onion onto the fork exposing the sliced side to the air, place into the mug for holding.  Leave in a sick room (children's bedroom if they have a cold/flu or tummy bug) this is noted to draw the dis-ease in the body out. remove the onion in a 24 hour period or if it discolours or looses it odour.

 “In a sickroom you cannot have a better disinfectant than the onion. It has a wonderful capacity for absorbing germs. A dish of sliced onions placed in a sickroom will draw away the disease; they must be removed as soon as they lose their odour and become discoloured, and be replaced by fresh ones.”

My daughter had a tummy bug over Friday and Saturday, last night I placed the onion in her bedroom and she has woken up with no pain and bright as a button.  May be coincidence but I will definitely be trying this next time she get a colds or any other illness as there is nothing to loose but an onion. 
Note: Always use a whole onion up when cooking don't store it half cut in the fridge as all bacteria from the environment good and bad will be draw to it which will not be beneficial to your health if you eat it.

Classic Grapefruit Marmalade

It is grapefruit season and this is our first year for a wonderful grapefruit crop.  Our little tree that we only put in last spring is chokka, so marmalade was on the card.  Saturday I started the humbling process by asking Mike (husband) to pick the organic grapefruit from our tree...

Classic Grapefruit Marmalade

3 large grapefruits
2 lemons
10 cups of purified water
8 - 10 cups of organic cane sugar (this can be purchased from biograin, organic stores and countdown) or can use white sugar.


Slice all the fruit then place in the food process and process until a rough chop, or if wishing to have the long slices cut with a sharp knife. 

Cover the fruit with the 10 cups of water soak over night.

Place into a large saucepan and bring to the boil and cook for 20 minutes or until the peel is opaque and soft.

Then add the sugar and boil for around 1/2 hour or until setting point is reached.

This is when you place a little marmalade onto a cold plate, place into the fridge for 3-5 minutes.  Run your finger through it, if it leaves a soft line through the centre it is done.  If the line closes up boil a little longer, if it is very firm line add some more water and test again. 

Place into sterilised jars, makes around 5 - 6 small jars.

Sterilise jars and lids by washing in hot soapy water, rinse them thoroughly.  Place them in a cold oven, heat up to 100 degree Celsius and leave in for 15 minutes.  Remove with mittens and place onto a tea towel (if placed onto a cold bench it will break), add in the marmalade into the hot jars and seal. 

To know the jars are sealed properly the middle of the lid with be sucked downwards if it is rinsed store in the fridge.  If sealed properly 
store in a cool, dark place.  

To get a good seal make sure the lids have no dents in them, then when the marmalade has been placed in the jar and lid on turn it quickly up-side down.  This sterilises the lid and gives a great seal.
